This Chicken Bone Broth Soup recipe is an easy, hearty one-pot meal. It includes juicy shredded cast iron chicken breast, wild rice or pasta, herbs and vegetables. Make this when you want a warm bowl of soup or when you need a meal prep or freezer meal.

Why Make Chicken Bone Broth Soup

There are so many reasons to make this healthy soup recipe. Here are my top three:

  • Great for meal prep: Homemade soup is perfect for meal prep (especially for cold weather and flu season) because you can prep it for the coming week & just reheat a bowl when you’re ready.
  • Enjoy the benefits of bone broth in soup: bone broth is believed to have several health benefits. Some of the top reasons I use it is because it has extra protein (compared to regular broth and chicken stock), makes me feel full longer, and a lot of vitamins and minerals (from the animal bones used to make it). By adding it to this delicious soup, you get all the benefits of it in a flavorful package.
  • Easy recipe, yet packed with flavor: You’ll be surprised at how simple ingredients, and so little hands-on time come packed with so much flavor.

Ingredients Needed

  • Chicken Breasts: about 2 chicken breasts. I’m using raw, boneless skinless chicken breasts
  • Sea salt
  • 24 herb sprinkle seasoning: This salt-free spice blend is one of my favorites because it includes things like garlic powder, onion powder, black pepper, thyme, and other herbs. You can feel free to swap it with any other salt-free seasoning like Italian seasoning or herbs de Provence. It’s available in most grocery stores in the seasoning aisle.
  • Black Pepper
  • Olive oil: I’m using olive oil to sear the chicken breasts, but you could also use another neutral oil like avocado oil.
  • Carrots: chopped
  • Celery: chopped
  • Yellow onion: diced
  • Garlic: fresh garlic cloves add so much flavor to most dishes. I personally like to mince my garlic with a garlic press. Another option is to get jarred minced garlic to save time.
  • Chicken bone broth: your favorite chicken bone broth or homemade bone broth will work in this recipe. I tend to get mine in a jar or box container from my local grocery store.
  • Bay leaves: I’m using dried bay leaves from the spice aisle
  • Wild rice: I’m using cooked wild rice, but you can also make chicken noodle soup with bone broth by substituting pasta like macaroni noodles or egg noodles.

How to Make Chicken Bone Broth Soup

  1. Prepare the chicken breasts: Mix the herb seasoning, sea salt and black pepper in a small bowl. Sprinkle them on both sides the chicken breast.
  2. Sear the chicken breasts: Heat olive oil in a large dutch oven to medium heat. Cook the chicken breast for 3-4 minutes per side (to sear/brown both sides)
  3. Saute the vegetables: Move the chicken to the outer edges of the pot. Add the olive oil, garlic, onions, carrots and celery to the center of the pot. Cook for 3 minutes (to get the vegetables tender)
  4. Simmer: Add bone broth and bay leaves to the pot. Stir. Cover the pot and cook on medium low for 10-15 minutes (to cook the chicken through)
  5. Shred the chicken using a hand shredder or dough attachment on a stand mixer.
  6. Add the shredded chicken and cooked wild rice to the pot. Cook for an additional 2-3 minutes.

You can also prepare this soup using an Instant Pot Pressure Cooker. Simply use the sear and sauté function.

  • No spices left behind: The spices for the chicken are also used to add herb flavors to the broth. Be sure sure to coat your chicken breasts with the spice mixture so that you use up all of it.

Storage and Leftovers

Store your leftover chicken bone broth soup in an airtight container in the refrigerator for up to 5 days.

You can also add the soup in portions to freezer bags to store it in the freezer for next time. Simply allow the soup to thaw in the refrigerator overnight and heat it in the microwave.

Bone Broth Chicken Soup Variations:

  • Make it creamy: If you’re a fan of creamy chicken soup, add a little cream cheese, heavy cream, and/or sour cream, based on your preference. I recommend starting with a tablespoon.
  • Use leftover chicken from a roasted chicken dinner: If you can’t or don’t want to buy chicken breast, you can use leftover shredded chicken (like from my instant pot shredded chicken recipe) or rotisserie chicken.

Make Your Own Chicken Bone Broth
