Baked BBQ Chicken Thighs

Ingredients
  

  • 2 lbs chicken thighs raw, boneless and skinless, with as much fat trimmed off as possible
  • ¼ cup bbq chicken rub
  • 2 tbsp olive oil or avocado oil
  • 1 cup BBQ Sauce hickory or Kansas City style bbq sauce

Instructions
 

  • Preheat the oven to 425 degrees.
  • Add the chicken thighs to a large mixing bowl with the bbq chicken rub and oil. Mix until all of the chicken is coated. Be sure to unroll the chicken thighs to get spices in the middle.
  • Add the chicken in a single layer to a broiler-safe baking dish. Be sure to keep the meat flat so that it cooks evenly.
  • Cook the chicken in the preheated oven for 15 minutes.
  • Remove the baking dish from the oven. Brush the meat with ½ cup bbq sauce. Be sure to coat all sides of the chicken.
  • Return the baking dish to the oven and cook for 15 more minutes.
  • Remove the baking dish from the oven. Brush the meat with ¼ cup more bbq sauce.
  • Broil on high for 2-3 minutes to char the chicken thighs and brown some of the bbq sauce.
  • Brush with remaining sauce and top with fresh chopped parsley before serving.
