Slow Cooker Baked Beans with Canned Beans

These slow cooker baked beans with canned beans are the perfect BBQ chicken side dish. They're easy to prep. Plus, this recipe uses plain canned beans so that you can still make homemade baked beans from scratch without soaking dry beans.

Ingredients
  

  • 12 oz Bacon I used no sugar-added bacon that I cut into bite-sized pieces/strips. Any bacon would work though and you can use the entire package.
  • 1.25 cup yellow onion diced
  • 6 cloves garlic minced
  • 62 oz cannellini beans 15.5 oz each, of cannellini beans, drained and rinsed, or another prepared small white bean
  • 1/2 cup chicken broth low-sodium
  • 1/3 cup bbq chicken rub click to use my recipe, this is a brown sugar bbq spice blend
  • 3/4 cup BBQ Sauce hickory or Kansas City style works best
  • 1/4 cup brown sugar
  • 2 tbsp Hennessy optional, or bourbon

Instructions
 

  • Add bacon strips and onions to a large non-stick skillet over medium-high heat.
  • Sauté until the bacon is browned and the onions are sauteed (about 8-10 minutes). Stir occasionally.
  • Pour chicken broth into the pan to deglaze it. Remove the pan from the heat.
  • Add everything from the pan and remaining ingredients to the bottom of a slow cooker cooking pot.
  • Stir to combine.
  • Slow cook on high for 3 hours.
  • Remove the lid and continue to cook on high for about 45 minutes. This will allow the sauce to thicken. Stir and serve.
